Making these limbers bring me back to the summers spent in Puerto Rico growing up. These coconut limbers are creamy and full of flavor!

Ingredients

Coconut Limbers

  • 1 1/3 Cup Coconut Milk
  • 1 14 oz Can Condensed milk
  • 1/2 Cup Heavy Cream
  • 1/8 Cup Water
  • 2 Cinnamon Sticks
  • 1/2 Tsp Vanilla
You will need 10 3oz disposable cups and Popsicle sticks.

Instructions

  1. This cannot get any easier. I will give 2 different ways that you can make this. Both insanely easy. One just takes a little more patience!
  2. In a bowl combine all of your ingredients except for the cinnamon sticks. Whisk together until combined well. Now this is where you have the choice! I like to make my coconut limbers with a cinnamon hint. It brings the flavor to a whole other level. Not only do you have the delicious taste of cinnamon but it intensifies the flavor of the coconut. So I highly recommend you make it like this unless you just want to not make them this way and just freeze them after combining all of the wet ingredients.
  3. Once you have whisked the mixture thoroughly you will add 2 cinnamon sticks to the mix and give it a small mix. Cover and refrigerate for 5 hours. Yes you read right. I did mention you will need some patience. Some things are worth the wait.
  4. After 5 hrs. Remove the cinnamon sticks give the mixture another gentle whisk and fill your cups almost all the way to the top but you will stop at that last line on the cup. Add a little cinnamon powder and some coconut flakes to the top before you put in the freezer. This will make 10 3oz cups.
  5. Wait 3-4 hrs until the mixture has firmed enough that you can add your popsicle sticks with out them falling! Once you add the popsicle sticks, freeze again for another 4 hrs until these bad boys are completely firm and ready to enjoy!
  6. To remove from the little cup either leave it out for a couple mins so they can melt just a bit that you can remove. You can also run a little warm water on the sides and they should come out very easily! Just be gentle the stick doesnt come out if its still too stuck to the cup!

TIPS

  1. So, I know the can will say this but I just want to remind you to shake the coconut milk well before popping open to add to your mixture. Yes you will be whisking it anyways but coconut milk can sometimes separate and get a little lumpy on the can and that shake goes a long way.
  2. You can make the limbers with or with out the cinnamon sticks but I highly reccomend it with the cinnamon sticks. I call it marinating the milk. It will be a much better experience to eat it with all of that flavor!
